MEET DANNY

Danny is a trailblazer in the specialty coffee industry. Born and raised in São Paulo, Brazil, he has always been surrounded by a strong coffee culture. He began his career in the specialty coffee industry in 2006. In 2008, he moved to Australia to expand his knowledge and work alongside passionate coffee connoisseurs who’ve shaped the industry.

Danny has worked in most areas of the coffee chain and is a familiar face at Australian Specialty Coffee Association (ASCA) and World Coffee Events (WCE) events, previously as a competitor and now as a certified judge. He has also travelled extensively and has experimented and collaborated with progressive specialty coffee producers in South and Central America, and Asia.

Processing Methods Bootcamp is a culmination of Danny’s travels, research and experiments. His vision behind this course is to connect producers with coffee professionals and he is doing that by unifying the language of processing methods.

COURSES

Processing Methods Bootcamp is a practical course designed to educate students on traditional and progressive processing methods. Students are immersed into harvesting and learn how to apply different processing methods to specialty coffee crop. This first-hand experience allows students to discover the direct impact each method has on flavour, structure and cup quality. It is a unique course which also provides a platform for our students to connect and share knowledge with each other - the spirit of the specialty coffee industry.
